Super Crunchy Fried Chicken Wings

Ingredients
  

For the chicken wings marinade

  • 2 tbsp mustard (french or english mustard)
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tbsp mixed herbs (Provence herbs or Italian Mix)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil

For the chicken wings crust

  • 250 g flour (2 cups)
  • 4 units eggs
  • 1 tsp salt
  • 1 tsp cayenne pepper
  • 1 tsp dried garlic
  • 1 tsp dried oignon
  • 1 tsp paprika
  • 2 tsp mixed herbs
  • 0.5 tsp black pepper
  • olive oil for frying

Chicken wings

  • 12 units chicken wings

Instructions
 

Marinate the chicken wings

  • Trim and separate the chicken wings
  • In a large bowl, add all the ingredients for the marinade: mustard, spices, olive oil and mix well.
  • Add the chicken wings in the bowl and mix well so that all chicken wings are well coated.
  • Cover the bowl with plastic wrap and leave to rest in the fridge for a minimum of 3 hours or overnight if you can.

Prepare the crunchy crust

  • In a small bowl or plate, beat the 4 eggs.
  • In another small bowl or plate, put the flour.
  • Add all the spices to the plate with the flour and mix.
  • Take a chicken wing, roll it in the egg, then in the flour ...and repeat again dipping the wing a second time in the egg and then the flour. Remove excess flour (shaking slightly the wing) and put on a plate.
  • Do this dipping process for all the chicken wings. The double dipping is what will make the chicken wings super crunchy.

Frying the wings

  • Once your chicken wings are ready, heat olive oil in a large pan on medium heat. Use enough oil to make sure that half of your wings thickness will be in the oil.
  • Fry the chicken wings for about 10 minutes (or until golden brown) turning them once.
  • Put the wings on kitchen paper towel to remove extra oil and serve.

Notes

Do not heat your olive oil on a high flame as you might get a burned crust and raw chicken. Frying the wings on medium heat will allow you to get a nice crust and nicely cooked wings. You might need to cook the chicken wings by batches if you pan is small.
You can serve those chicken wings with your favorite dipping sauce.
