- Trim and separate the chicken wings
- In a large bowl, add all the ingredients for the marinade: mustard, spices, olive oil and mix well.
- Add the chicken wings in the bowl and mix well so that all chicken wings are well coated.
- Cover the bowl with plastic wrap and leave to rest in the fridge for a minimum of 3 hours or overnight if you can.
- In a small bowl or plate, beat the 4 eggs.
- In another small bowl or plate, put the flour.
- Add all the spices to the plate with the flour and mix.
- Take a chicken wing, roll it in the egg, then in the flour ...and repeat again dipping the wing a second time in the egg and then the flour. Remove excess flour (shaking slightly the wing) and put on a plate.
- Do this dipping process for all the chicken wings. The double dipping is what will make the chicken wings super crunchy.
Do not heat your olive oil on a high flame as you might get a burned crust and raw chicken. Frying the wings on medium heat will allow you to get a nice crust and nicely cooked wings. You might need to cook the chicken wings by batches if you pan is small.
You can serve those chicken wings with your favorite dipping sauce.
